Acetobacter -

• Acetobacter are bacteria able to convert sugars and alcohol to acetic acid.
  
  
• They normally require oxygen for growth (i.e. are aerobics).
  
  
• Their growth can be inhibited by minimising contact with oxygen and the judicious use of sulphur dioxide (SO₂).
