Acid Taste Balance
Varying Acid levels contribute to the Taste Balance of wines.
Unbalanced wines due to low acidity produce -
- wines lacking freshness and liveliness (especially in young white wines)
- mature wines that look tired
- wines that are described as "flabby" and lacking "acid length"
- wines that are out of balance with other taste and flavour components
e.g. Sweet wines with a cloying rather than a clean, balanced finish.
Unbalanced wines due to high acidity produce -
- wines, too sour or sharp and in extreme cases, even painfull
Note: high acidity in young wines with aging potential, that may seem unbalanced in youth, can be in perfect balance on maturity.
This is especially so with white base wines suitable for sparkling wine production.
- wines that are out of balance with other taste and flavour components
