Bound Sulphur Dioxide (SO₂)

• Bound sulphur dioxide (BSO₂) is that portion of SO₂ (sulphur dioxide) added to juice or wine that has bonded with various SO₂ binding compounds found in juice or wine.
  
  
• This renders that portion of SO₂ inaffective.
  
  
• The amount of SO₂ bound up is predominantly dependent on the concentration of the binding compounds present in juice or wine.
