Bound Sulphur Dioxide (SO2)
- Bound sulphur dioxide (BSO2) is that portion of SO2 (sulphur dioxide) added to juice or wine that has bonded with various SO2 binding compounds found in juice or wine.
- This renders that portion of SO2 inaffective.
- The amount of SO2 bound up is predominantly dependent on the concentration of the binding compounds present in juice or wine.
