Addition of Boiling Chips

• Once heating has commenced, without any boiling chips added to the boiling flask, and especially if the heat has been applied for some time, the wine could be super heated (see bumping).
  
  
• Adding the boiling chips at this stage could result in a violent and dangerous release of energy.
  
  
• Instead, allow the wine to cool right down, remove the boiling flask, add the boiling chips, reconnect and proceed to heat the wine and to collect the distillate.
