Volatile Acidity Equivalents
- Volatile acidity of a solution, is a measure of all the various volatile acids present in solution.
- The calculations performed to determine the grape juice or wine's volatile acidity, following the titration procedure, assumes, for convenience, that all volatile acids exist as acetic acid.
- Acetic acid is chosen to represent all of the volatile acids present, as it is the predominant volatile acid.
- The concentration of volatile acidity then is given in g/L as acetic acid or acetic acid equivalents.
