Phenolics
- Phenolics are compounds that have a phenol as their base unit.
- Phenolics are tannins extracted from skins, seeds and stalks
- Phenolics are colour compounds or pigments found abundantly in red grape skins and are called anthocyanins
- Phenolics are flavour compounds.
- Phenolics are also extracted from oak barrels.
- Phenolics join together to form large molecules (polymerisation), incorporating red pigment phenolics and also SO2, forming increasingly higher molecular weight (heavier) polymers, that finally deposit out of solution (part of aging, red wine deposits).
