More on liquid sulphur dioxide (SO2)
- Sulphur dioxide (SO2) can be purchased in pressurised bottles as a liquid.
- This form of SO2 (sulphur dioxide) can be introduced into wine as a liquid, via a dosage meter.
- At atmospheric pressure, this liquid will immediately expand into the gaseous state and dissolve into juice, wine or water.
- The liquid form of SO2 is suitable for larger wineries where it is introduced directly into tanks below the surface of the juice or wine.
- It is also directly introduced into empty, used oak barrels to inhibit microbial growth.
Microorganisms readilly utilise ingrained wine residues found in used wine barrels as a nutrient source.
This is often a source of wine spoilage.
