Molecular SO₂'s effectiveness

• Molecular SO2 is the most effective form of SO₂ involved in the inhibition or denaturation of oxidative enzymes found in grape juice - significantly reducing oxidation reactions.
  
  
• Molecular SO₂ is the most effective form of SO₂ involved in the inhibition of growth and activity of microorganisms, especially bacteria.
  
  
  The absence of a charge on molecular SO₂, compared to the bisulphite ion (H SO₃^-), enables molecular SO₂ to migrate, non interactively, through the cell walls of microorganisms. Once inside the cell it can interfere with their inner workings (ie their biochemistry).
