Molecular SO2's effectiveness
- Molecular SO2 is the most effective form of SO2 involved in the inhibition or denaturation of oxidative enzymes found in grape juice - significantly reducing oxidation reactions.
- Molecular SO2 is the most effective form of SO2 involved in the inhibition of growth and activity of microorganisms, especially bacteria.
The absence of a charge on molecular SO2, compared to the bisulphite ion (H SO3-), enables molecular SO2 to migrate, non interactively, through the cell walls of microorganisms. Once inside the cell it can interfere with their inner workings (ie their biochemistry).
